Brown Sugar Cinnamon Pop Tarts

INGREDIENTS:

Dough:


Filling:

  • 1 1/2 cups organic brown sugar

  • 2 Tablespoons organic flour

  • 2 Tablespoons organic ground cinnamon

  • 4 Tablespoons grass-fed butter

  • 2 teaspoons organic pure vanilla extract


Icing:

  • 2 cups powdered sugar

  • 1 Tablespoon pure vanilla extract

  • 1 teaspoon organic ground cinnamon


DIRECTIONS:

  1. Combine all filling ingredients in a bowl

  2. Make the dough

  3. Roll dough out into a 1/8-inch thickness and cut into 3x4 squares

  4. Place bottom pie crust on a parchment-lined baking sheet

  5. Place 2 Tablespoons filling on each crust, leaving about 1/4-inch on each side

  6. Place top pie crust on each pop tart

  7. Using a fork, crimp the sides of the pop tart to help hold the filling in

  8. Place in freezer for 20 minutes

  9. Preheat oven to 400°F

  10. Bake for 15-20 minutes or until pop tarts are golden brown

  11. While pop tarts are baking, combine all ingredients in a bowl. Add water 1 Tablespoon at a time if it is too thick.

  12. Allow pop tarts to cool before topping with frosting.


TIPS:

  • You can make your own powdered sugar by processing/blending sugar until it becomes powder.

  • You can use any flour (spelt would be great), including gluten free
