Chocolate Date Truffles

INGREDIENTS:

  • 1 cup organic dates, pitted

  • 1/3 cup organic cocoa powder

  • 1/3 cup Enjoy Life dark chocolate chips

  • 1 Tablespoon organic coconut oil


DIRECTIONS:

  1. Soak dates in boiling water for at least 5 minutes.

  2. Line cookie sheet with unbleached parchment paper.

  3. Reserve 2 Tablespoons water to help mix the dates.

  4. Add soaked dates, cocoa powder, and water to a food processor and process until mixture has become very smooth.

  5. Use a scoop to scoop even-sized truffles on parchment-lined cookie sheet.

  6. Allow truffles to chill in freezer for at least 10 minutes.

  7. While truffles are chilling, melt chocolate chips and coconut oil in microwave. You can start by melting for 1 minute; if they have not fully melted in that time, heat in increments of 15 seconds to avoid burning.

  8. Drop the truffles into the chocolate (or drizzle on top) and return to freezer to let harden.


TIPS:

  • You can use any type of date, but my preferred is Medjool.

  • If you are unable to have cocoa, carob powder will be great!

  • You do not need to add coconut oil, it just helps with the "crunch" of the shell and slightly thin the chocolate.
