One Pot Sausage and Shrimp Jambalaya

INGREDIENTS:

  • 1 Tablespoon oil

  • 1 pound Amylu andouille chicken sausages, sliced *

  • 1 pound shrimp, peeled and deveined

  • 1 - 24 ounce Pomi diced tomato container

  • 4 stalks celery, sliced

  • 1 onion, diced

  • 2 bell peppers, diced

  • 1 Tablespoon creole seasoning *

  • 1 Tablespoon minced garlic

  • 1 teaspoon oregano

  • 1 cup rice, uncooked

  • 1 cup water


DIRECTIONS:

  1. In a large skillet over medium-high heat, add oil and shrimp

  2. Cook shrimp until almost fully cooked (pink in color, no translucency)

  3. Add all remaining ingredients and stir well to combine

  4. Bring to a boil for 2 minutes

  5. Reduce heat to medium and allow to cook until rice has been fully absorbed (about 30 minutes)

  6. Stir occasionally to avoid burning

This sausage is not 100% LEAP-approved due to "spices" listed on the ingredient list. I have sent an email to Amylu inquiring about what specific spices are added. I will update when I have one!
