One Pot Sausage and Shrimp Jambalaya

INGREDIENTS:

1 Tablespoon oil
1 pound Amylu andouille chicken sausages, sliced *
1 pound shrimp, peeled and deveined
1 - 24 ounce Pomi diced tomato container
4 stalks celery, sliced
1 onion, diced
2 bell peppers, diced
1 Tablespoon creole seasoning *
1 Tablespoon minced garlic
1 teaspoon oregano
1 cup rice, uncooked
1 cup water
DIRECTIONS:
In a large skillet over medium-high heat, add oil and shrimp
Cook shrimp until almost fully cooked (pink in color, no translucency)
Add all remaining ingredients and stir well to combine
Bring to a boil for 2 minutes
Reduce heat to medium and allow to cook until rice has been fully absorbed (about 30 minutes)
Stir occasionally to avoid burning
