Dairy Free Banana Bread

INGREDIENTS:


  • 2-3 organic bananas, very ripe

  • 3/4 cup organic cane sugar

  • 1/3 cup 100% organic applesauce

  • 1 organic pasture raised egg

  • 1 teaspoon organic vanilla extract

  • 1/2 teaspoon organic baking soda

  • 1 pinch salt, unrefined

  • 1 1/2 cup organic flour


DIRECTIONS:

  1. Preheat oven to 350°F

  2. Spray loaf pan with 100% avocado/olive oil spray

  3. In medium size bowl, mash banana until smooth

  4. Mix in sugar, applesauce, egg, and vanilla extract

  5. Add baking soda, salt and sugar

  6. Fold in flour being sure not to overmix

  7. Pour batter into pan

  8. Bake for 50 minutes or until toothpick comes out clean


TIPS:

  • You can use regular butter instead of applesauce, that will create a less-spongy bread

  • If you have an egg allergy/sensitivity, use a flax egg (1 Tbsp ground flax + 2 Tbsp water)
