Fudgy Brownies

INGREDIENTS:
5 Tablespoons butter*
1 1/4 cups cane sugar*
2 eggs + 1 egg yolk, cold*
1 tsp vanilla extract
1/3 cup oil - use any approved oil, olive oil will produce the fudgiest brownie.
3/4 cup cocoa powder*
1/2 cup flour - use any approved flour
1 Tablespoon cornstarch*
1/4 teaspoon salt
1/8 teaspoon baking soda
3/4 cup Enjoy Life chocolate chips*, optional
DIRECTIONS:
Preheat oven to 325°F
Melt butter in microwave-safe bowl
In a large bowl, add butter to sugar and combine well
Whisk in eggs, egg yolk, vanilla, and oil
Add cocoa powder and combine well
Fold in flour, cornstarch, salt and baking soda
Fold in chocolate chips
Line 8x8 pan with parchment paper and spread batter evenly into it
Bake for 30 minutes

Homemade Flax Egg
recipe equals 1 whole egg
1 Tablespoon flaxseed, ground
2 1/2 Tablespoons water
Combine flax + water, let sit for 5 minutes to thicken
Applesauce
1/4 cup applesauce = 1 whole egg
Cocoa Powder
Carob Powder
1:1 substitution
Cornstarch
Tapioca Starch
1:1 substitution
Potato Starch
1:1 substitution
