Deconstructed Skillet Stuffed Peppers

INGREDIENTS:

1 pound ground meat*
3 organic bell peppers, diced or julienned
1/2 organic yellow onion, diced
8 ounces salsa
1 cup organic rice
1/2 cup Homemade Vegetable Broth (recipe here:

DIRECTIONS:
In a large, stainless steel skillet over medium-high heat, brown meat
Drain excess grease and return to pan
Add bell peppers, onion, salsa, and rice
Mix well to combine and bring to a boil
Reduce heat to simmer and cover with lid
Simmer for about 15-20 minutes or until all liquid has been absorbed and rice is tender
*add vegetable broth as needed until rice becomes completely cooked
Top with toppings of choice!
TIPS:
*Can use any form of ground meat: beef, turkey, chicken, venison, bison, etc. Remember quality matters!
