Date "Snickers"

INGREDIENTS:

  • 8 organic Medjool dates

  • 1/2 cup organic 100% creamy peanut butter

  • 1/4 cup organic pretzels, crushed

  • 20 organic whole pretzels

  • 1 cup Enjoy Life dark chocolate chips

  • 1 1/2 Tablespoon organic unrefined coconut oil


DIRECTIONS:

  1. If your dates aren't very soft, soak in water for at least 10 minutes.

  2. Add pitted dates and peanut butter to a food processor. Process until a it is well-combined and forms a gooey mixture. You may need to add water (or 100% pure maple syrup) to help achieve this consistency.

  3. Add pretzels and lightly pulse to combine them into the mixture.

  4. On a parchment-lined cookie sheet, lay out whole pretzels and place ~1 Tablespoon filling on each pretzel.

  5. Using your hands, form filling onto pretzel to create a "candy bar" shape.

  6. Place pretzels in freezer for 10-15 minutes.

  7. While pretzels are hardening, melt chocolate and coconut oil together. Melt in 30 second increments to avoid burning the chocolate.

  8. Dip pretzel/filling mix into chocolate and coat evenly. You want to work fast to ensure the chocolate doesn't harden.

  9. I topped mine with finely chopped peanuts and flaky sea salt!

  10. Once all pretzels have been coated in chocolate, place in freezer to let harden.
