Date "Snickers"

INGREDIENTS:

8 organic Medjool dates
1/2 cup organic 100% creamy peanut butter
1/4 cup organic pretzels, crushed
20 organic whole pretzels
1 cup Enjoy Life dark chocolate chips
1 1/2 Tablespoon organic unrefined coconut oil
DIRECTIONS:
If your dates aren't very soft, soak in water for at least 10 minutes.
Add pitted dates and peanut butter to a food processor. Process until a it is well-combined and forms a gooey mixture. You may need to add water (or 100% pure maple syrup) to help achieve this consistency.
Add pretzels and lightly pulse to combine them into the mixture.
On a parchment-lined cookie sheet, lay out whole pretzels and place ~1 Tablespoon filling on each pretzel.
Using your hands, form filling onto pretzel to create a "candy bar" shape.
Place pretzels in freezer for 10-15 minutes.
While pretzels are hardening, melt chocolate and coconut oil together. Melt in 30 second increments to avoid burning the chocolate.
Dip pretzel/filling mix into chocolate and coat evenly. You want to work fast to ensure the chocolate doesn't harden.
I topped mine with finely chopped peanuts and flaky sea salt!
Once all pretzels have been coated in chocolate, place in freezer to let harden.
