Crockpot Pot Roast

INGREDIENTS:

2 pounds grass-fed chuck roast
1 organic yellow onion, diced large
4 organic carrots, sliced large
3 organic russet potatoes, diced large
4 organic garlic cloves, sliced
1 teaspoon organic dried parsley
1 teaspoon organic onion powder
1 teaspoon organic garlic powder
1 teaspoon organic unrefined salt
1/2 teaspoon organic black pepper
1 cup homemade vegetable broth

DIRECTIONS:
Place all ingredients in crockpot
Cover and cook on low for 6-8 hours
TIPS:
Let's be real - it is quite difficult to find a grass-fed chuck unless you have a great local butcher or have ordered a grass-fed cow for your family. I ended up using stew meat in the picture I shared because it was available and convenient. Choosing that decreased my stress which is just as important (if not more important) than stressing about finding a grass-fed roast. You can also see I used baby carrots - I don't usually (if ever) have baby carrots due to them being heavily processed and adding chlorine. I was exhausted the week I went grocery shopping for this meal and chose to purchase the baby carrots knowing it was not my "usual" rather than draining myself further to go to another store for whole organic carrots.
