Crockpot Chicken Burrito Bowl

INGREDIENTS:

  • 2 pounds organic pasture-raised chicken breast

  • 1-2 Tablespoons homemade taco seasoning (recipe here: https://baileyroserd.wixsite.com/nutrition/post/taco-seasoning)

  • 1-28 ounce can diced tomato

  • 1-15 ounce can organic black beans, rinsed and drained

  • 1 cup organic sweet corn

  • 4 cloves garlic, minced

  • 2 jalapenos, seeded and minced


    • Optional toppings: plain Greek yogurt/sour cream, cilantro, salsa

    • Optional sides: rice, tortillas, chips


DIRECTIONS:

  • Place chicken breast in crockpot

  • Season both sides of chicken with seasoning

  • Add tomatoes, beans, corn, garlic, and jalapenos

  • Cook on low 6-8 hours (or overnight)

  • Shred chicken and split evenly into 4-5 containers.

  • Store in airtight container for up to 4 days.

  • Top with optional toppings
