Homemade Heavenly Hunks

INGREDIENTS:
2 cups organic oats, blended + 1 cup
⅔ cup unsweetened coconut flakes
½ cup organic almond flour
1 cup dark chocolate chips
½ cup organic unrefined coconut oil
½ cup organic pure maple syrup
½ cup organic 100% peanut butter
DIRECTIONS:
Add 2 cups oats to food processor or high speed blender until fine. Remove from processor.
Add 1 cup oats and coconut to food processor and pulse 4-5 times to break them down slightly.
In a large bowl, aEd oat flour, oat/coconut mixture and almond flour. Stir well to combine.
Melt coconut and add all wet ingredients to dry ingredients. Mix until dry ingredients are well-coated.
Place in refrigerator for about 10 minutes to let cook before adding chocolate chips. If you keep it in the fridge too long the mixture will harden quite a bit due to the coconut oil.
Once cooled, add chocolate chips.
Press mixture into an 8x8 pan.
Return to fridge to allow bars to harden before cutting.
Remove from fridge and cut into even-sized squares to create a “hunk.”
Store in fridge in an airtight container.
