Cottage Cheese Bagels

INGREDIENTS:

1 cup organic unbleached flour (can use gluten-free!)
2 teaspoons Hain baking powder
3/4 teaspoon Redmond RealSalt
1 cup Daisy cottage cheese
1 organic pasture-raised egg
Toppings - everything bagel seasoning, poppy seeds, blueberries, cinnamon/sugar
DIRECTIONS:
Preheat oven to 375°F and place unbleached parchment paper on a cookie sheet.
In a food processor, add cottage cheese and pulse until completely smooth.
Add flour, baking powder, and salt to food processor.
Pulse until well-incorporated and dough starts pulling away from the sides.
On a clean, floured surface, knead the dough 8-10 times, adding flour as needed so the dough no longer sticks to your hands.
Roll into a ball and divide into 4 equal pieces.
Roll each dough ball into a 3/4-inch rope and join the ends to form bagels.
Brush each bagel with egg wash and season as you would like.
Bake on the top rack for 25-30 minutes.
Wait at least 15 minutes before cutting into the bagel.
TIPS:
I prefer Daisy cottage cheese because there are no unnecessary ingredients added. Be sure to check the ingredient list on any other brand cottage cheese that you may pick up! Another good brand is GoodCulture.
If you are unable to tolerate cottage cheese, you can make a 1:1 substitution with plain Greek yogurt. Greek yogurt creates a more bitter/tangy bagel, so I personally prefer cottage cheese.
