Energy Bites

INGREDIENTS:

3 cups gluten free oats
1 1/2 cups flaxseeds, whole or ground
1 cup Vital Proteins Collagen Powder 1 cup Enjoy Life dark chocolate chips
2 cups 100% peanut butter
1 cup raw unfiltered honey
1/2 cup chia seeds
1 Tablespoon vanilla extract
DIRECTIONS:
Combine all dry ingredients until well-combined.
Add all ingredients and mix until well-combined.
Roll into even-sized bites.
Store in an airtight container in freezer or fridge.
MY TID BITS:
I recommend gluten free oats to limit glyphosates that are found on regular oats. Glyphosate has been linked to digestive issues, chronic inflammation, behavior concerns, and more.
If you do choose to use ground flaxseed, grind it right before use. You do not want to purchase pre-ground flaxseeds as that decreases the omega-3 content after the seed has been broken open. Be sure to store your flaxseeds and chia seeds in the freezer to help the seeds from going rancid.
You can use any type of protein powder in these. I prefer Vital Proteins collagen because it is flavorless so you get all the wonderful flavors of the bites without the "protein taste."
I recommend Enjoy Life chocolate chips because the ingredients are so straight-forward: cane sugar, unsweetened chocolate, cocoa butter.
